Chirripo山脈是哥斯大黎加最高山峰。咖啡種植海拔大約1,600公尺的區域, 微型氣候及地理環境造就高品質的咖啡。 「蜜處理」Honey / Pulped Natural Process 介於日曬法與水洗法,去除果皮與果肉後,保留果膠黏膜在陽光下曝 曬。蜜的意思來自於很黏的果膠層,黏的感覺如蜜一般。果膠層保留了高比 例的糖分及酸質,是蜜處理的關鍵,產生的風味在日曬法與水洗法之間。 黃 蜜(大約保留25%的果膠層):曝曬時間較短,果膠層糖分的酵素反應較少。
